With the economy taking a nosedive, cheap breakfasts like pancakes are getting renewed attention.

This cheap and delicious recipe will make your weekday breakfasts easy with pancake sandwiches on the go.

This recipe also features a high-fibre version for those who prefer whole wheat. No matter how you like them, making your own pancakes are still better for you and the planet. Buying frozen pancakes means increasing your carbon footprint, by transporting it from a factory, then using electricity to keep them frozen.

Save Money With Homemade Pancakes

Frozen and pre-made pancakes cost more than a single batch of homemade ones. Once your batch of pancakes are cooked, freezing them yourself for future use will not only save you time in the long run: this recipe will yield you more than the average box of a dozen frozen pancakes.

Time Saving Breakfasts

Making a large batch, or even a double batch has several advantages for those who have the time to make a stack of pancakes. Once you’ve mixed the pancake batter, you can separate the batter into different bowls, and add fruit, nuts, or even chocolate chips, for ‘different’ flavoured batches.

Making Your Own Pancake Mix

If the idea of standing in front of a griddle making several batches horrifies you, there is always the option for making your own mix. Mix all the dry ingredients together in an air-tight container and label it “pancake mix”. Write down what quantities of ‘wet’ ingredients it needs (eggs, milk, margarine) on a note, and you have an instant mix for those mornings you have no patience to pull out a recipe.

Easy, Fluffy Pancake Recipe

Note: If doubling the recipe, only use 1 teaspoon of salt.

  • 2 cups of all purpose flour. If you’re into whole wheat, make it 1 3/4-cup (the extra fibre expands)
  • 5 teaspoons baking powder
  • 1 teaspoon salt
  • 3 tablespoons sugar
  • 2 eggs
  • 2 cups milk
  • 1 teaspoon vanilla extract
  • 1/3 cup melted margarine or butter

Sift all the dry ingredients together. (If you’re not going to make them immediately, this would be the point where you can put them in a container and label it “Pancake Mix”.)

In a separate bowl, beat the eggs together with the milk and then add the melted butter or margarine. Make sure it’s cooled, or else the heat will cook the eggs and produce a lumpy batter.

On medium-high heat, add a ladle full of batter onto your greased skillet. When bubbles form, flip it over before they pop: This yields a softer, fluffier pancake.

Easy Pancakes To Go

When they are cooled, store the pancakes in sandwich boxes, or small Tupperware containers, as many as you can normally eat in a serving. While your pancakes are cooking, make a batch of bacon and/or sausage to add to your breakfast sandwiches.

Once cooled, put a slice of cheese, or a slice of ham or bacon in the centre, and roll the pancakes like a cigar. You can also pack a stack of three (or how many you can eat in a serving), and freeze - they can be microwaved in a hurry for an instant breakfast. Cooked eggs will not freeze as well; it may be best to just forgo them altogether and replace eggs with fruit.

Don’t freeze fruit along with the pancakes. Slice a banana or some strawberries up before leaving, and then nuke them all in the same container. For extra wow, use an empty film canister to store and carry a serving of maple syrup.

Make several of these breakfasts-to-go in their own containers and label them well; you can have breakfast sandwiches any day of the week without fuss, by just taking them out of the freezer and microwaving them for a few minutes.
